Kawabu: The Beauty of Sake Across Temperatures (Event)
At Kawabu, the tradition is to always maintain a youthful and fresh spirit, drawing inspiration from the local concept of “Tokowaka," which signifies everlasting youth and purity, encouraging us to honour the past, embrace the present and pursue the new.
As we embrace new energy and fresh perspectives this year, we have partnered with the award-winning Kawabu Jozo for our first sake pairing of the year. Established in 1857 in the town of Taki in Mie Prefecture, Kawabu sakes are crafted from pristine soft water sourced from the Miya River, connected to the Ise Shrines via underground streams. The water quality from the Miya River has consistently ranked first in numerous Japanese water quality surveys since 2000. The sakes are made with rice unique to the region, including the brewery’s proprietary "Yuminariho" rice, as well as Mie-Yamadanishiki and Mie-Gohyakumangoku varieties.
Join Master Sake Sommelier Janice Chi and Hidehiko Kawai, the 8th generation president of Kawabu Jozo, in this 6-course pairing showcasing the brewery's signature classics from their 3 concepts (Kawabu, Shiki and Hokosugi), including award-winning labels and Yamahai style editions. Each label will be matched with seasonal creations by Chi-san (Chef-owner of Ishinomaki Group).

About Janice Chi (M.S.S.)
Janice is the first female restaurateur in Singapore to receive the prestigious Master Sake Sommelier (Sake Sommelier Academy). She also holds a WSET Level 3 Award in Sake and a Certified Sake Scholar qualification (Sake Scholar Course). An advocate for craft sake, Janice continually pushes the boundaries of sake and food pairing. Collaborating closely with her husband, executive chef Chi Pin Han, she expertly matches sake with an array of food flavours.
About Hidehiko Kawai
The 8th generation president of Kawabu Jozo. With an extensive background in the sake industry, Kawai-san served as a sake brewer at the Nagoya Regional Taxation Bureau Appraiser's Office, contributing as a member of the sake tasting committee for about 5 years. In addition to his involvement in the brewing sector, he dedicated 9 years to the role of vice president within the Taki Town Community in Mie Prefecture.

Chi-san is the brain behind all the delectable food offerings on the menu. Having over 40 years of experience honing his culinary skills at several Japanese restaurants including Meguro Gajoen Tokyo, Pan Pacific Singapore’s Keyaki Restaurant and InterContinental Singapore. Chi-san takes pride in providing his customers with the freshest ingredients cooked in the best possible way. The tiniest details are never overlooked, from the dinnerware to the finishing touches of every dish.
