Back in 2017, at just 24 years old, Mako Yoshida stepped into the role of toji (master brewer) at her family's sake brewery, Yoshida Shuzo, continuing a legacy that spans generations. Her talent and experience didn't go unnoticed, as she became Japan's youngest female toji, a title she still holds, and has since won numerous awards for her craft. On the other side, in 2022, Ms Janice Chi made history as the first female restaurateur to earn the esteemed Master Sake Sommelier title. Her knack for pairing sake with food shines, making her a standout in the industry. Now, in 2024, the paths of the two connect. Get ready to savour the synergy they bring to each pour and bite in this 6-course sake pairing.

About Yoshida Shuzo
Founded in 1806 with a mission to touch the senses - the eyes, hands and heart - Yoshida Shuzo proudly presents its flagship brand, "Hakuryu" or "Eiheiji White Dragon". Every sake crafted by the brewery is made exclusively from rice grown in Eiheiji town, Fukui Prefecture, within a 10km radius of the brewery. About Mako Yoshida
After finishing university, Mako joined Yoshida Brewery Co., Ltd., her family's long-standing business. At just 24, she stepped into the role of chief brewer, following in her late father's footsteps and becoming the country's youngest female master brewer. In 2017, under Mako's leadership, Yoshida Sake Brewery transitioned into a pure rice sake (junmai) brewery. Mako's vision is to craft sake that mirrors the purity of the local water, creating a beverage meant to complement meals while showcasing the unique qualities of Eiheiji-grown rice.
About Janice Chi (M.S.S.)
Janice is the first female restaurateur in Singapore to receive the prestigious Master Sake Sommelier (Sake Sommelier Academy). She also holds a WSET Level 3 Award in Sake and a Certified Sake Scholar qualification (Sake Scholar Course). An advocate for craft sake, Janice continually pushes the boundaries of sake and food pairing. Collaborating closely with her husband, executive chef Chi Pin Han, she expertly matches sake with an array of food flavours.

Chi-san is the brain behind all the delectable food offerings on the menu. Having over 40 years of experience honing his culinary skills at several Japanese restaurants including Meguro Gajoen Tokyo, Pan Pacific Singapore’s Keyaki Restaurant and InterContinental Singapore. Chi-san takes pride in providing his customers with the freshest ingredients cooked in the best possible way. The tiniest details are never overlooked, from the dinnerware to the finishing touches of every dish.
