A one man show continues the tradition of over 300 years, focusing on small-batch ginjo and junmai ginjo. This sake is a Shiboritate that did not undergo heat treatment (unpasteurised), often marked by its fresh, vibrant profile.
UT-1 yeast is part of the Akita Snow Country family, developed to maintain freshness of sake even at room temperature and notable for producing apple-like aroma.

Overall crisp and invigorating. Subtle strawberry-like aroma accompanied by a gentle fizz and prominent acidity on the palate. Best savoured with white fish sashimi, fruit salads, and as a dessert with strawberry shortcake.
