Saké & Cheese Pairing (Event)
Saké is the only alcoholic beverage with an umami component. With this characteristic, it makes an excellent pairing with cheese as they share many characteristics. In saké, lactic acid produced during fermentation adds notes of cream and milk to the flavour and texture. In cheese making, the lactose in milk converts to lactic acid during fermentation and ageing creating similar delicious compounds.
