Yamagata is one of the best and most lauded regions for sake making, with a treasure trove of soft waters and high-quality sake rice. Home to approximately 50 sake breweries, Yamagata became the first prefecture to attain a Geographical Indication (GI) in December 2016. The region is renowned for fruity, aromatic, light, and clean ginjo-shu. 

In our upcoming 6-course sake pairing, we are thrilled to collaborate with not one, but two long-standing revered Yamagata sake breweries and their Master Brewers. Representing Shindo Sake Brewery, known for its popular Gasanryu sake, is Mr Masanobu Shindo, and from Shuho Sake Brewery, celebrated for the well-loved Shuho labels, we have Mr Hidekazu Takeda.

About Shindo Sake Brewery

Founded in 1870, their flagship label "Gasanryu" was developed by Mr. Masanobu Shindo, who revamped the brewing process and products. Gasanryu is often compared to Juyondai and has won numerous awards, including top prizes at IWC and U.S. National Sake Appraisal.

Shindo san explains the meaning of Gasanryu:

“A mountain is something that cannot be moved, a river is something that flows. Some things pass you by in daily life and some things are fixed. It is only when people are disconnected from nature that such thoughts persist. When one is in touch with nature, he realises that with the ever-flowing passage of time even mountains may move, and rivers may stop. It is with this connection to nature that our sake is brewed, and this feeling is embodied in the name Gasanryu.”


About Masanobu Shindo
The 10th generation president and master brewer of Shindo Brewery, Shindo san's interest and passion for sake brewing were instilled in him from a young age. At the age of 9, he began observing and helping his grandfather and the head brewer in the production process. To fine-tune his craft, he studied sake brewing at the Tokyo University of Agriculture. He is also a member of the sake rice and technical committee of the Yamagata Sake and Shochu Association.


About Shuho Sake Brewery
Established in 1890 at the base of Zao Mountain range in the northeastern part of Yamagata City. The production is centered around Ginjo sakes, utilising over 10 varieties of rice primarily cultivated in Yamagata. The brewery holds a deep reverence for traditional techniques and product excellence.


About Hidekazu Takeda
The managing director and 6th generation owner of Shuho Sake Brewery. With a unique career path as a sake brewer and a doctorate in engineering, Takeda-san’s prior role as an engineer saw him consistently challenging conventions, inventing novel products. Now, he brings his relentless spirit to the world of sake.


About Janice Chi
Janice is the first female restaurateur in Singapore to receive the prestigious Master Sake Sommelier (Sake Sommelier Academy). She also holds a WSET Level 3 Award in Sake and a Certified Sake Scholar qualification (Sake Scholar Course). An advocate for craft sake, Janice continually pushes the boundaries of sake and food pairing. Collaborating closely with her husband, executive chef Chi Pin Han, she expertly matches sake with an array of food flavours.


About Chi Pin Han
Chi-san is the brain behind all the delectable food offerings on the menu. Having over 40 years of experience honing his culinary skills at several Japanese restaurants including Meguro Gajoen Tokyo, Pan Pacific Singapore’s Keyaki Restaurant and InterContinental Singapore. Chi-san takes pride in providing his customers with the freshest ingredients cooked in the best possible way. The tiniest details are never overlooked, from the dinnerware to the finishing touches of every dish.
