Niida Honke is one of the very few breweries in Japan that exclusively uses Shizenmai (organic rice) for sake making, rice grown without any chemical fertilisers and pesticides. This particular bottle is an undiluted kimoto sake, brewed using Yondan-jikomi (four stage mashing), instead of the regular three-stage process.
