Sommelier's Notes

Mild fruit aromatics of starfruit with apparent notes of steamed rice, yoghurt, cheese and mochi. Kyokai No. 9 yeast gives a slight lift to the acidity with the lactic and grain notes standing out. Enjoy this slightly chilled at 15-18°C or warmed up to 40-50°C to further boost the umami notes.
