A fantastic effort at using little known rice Misatonishiki and a variant of the Akita Flower Yeast. A blast of Japanese crown melon with pistachio, almond milk, banana bread and mochi with a well balanced acidity that finishes cleanly with melon rind, pistachio and mochi. Served well chilled at 8-10°C.
