Using a more traditional yeast Kyokai #901, expect subtle aromas of steamed rice, toasted cereal and yellow chrysanthemum. Hints of minerality and shoyu as well, giving a perception of ageing (but it's not!). Great acidity with notes of umami and sweet rice flavours shining through with a dry kire finish. Enjoy chilled at 8-12°C or warmed up 40-50°C to exhibit the umami notes.
